Ingredients

  • 4 6-8 oz Salmon fillets skin-on
  • ¾ cup Mayonnasie
  • cup Dijon Mustard
  • 1 tablespoon Fresh Dill Chopped
  • Salt and pepper to taste

Instructions

  • Preheat the Oven Set your oven to 400°F (200°C) so it’s ready to finish cooking the salmon after searing.
  • Prep the Salmon Pat the salmon fillets dry with paper towels, especially the skin side. This helps the skin crisp up in the pan.
  • Make the Mustard Glaze In a small bowl, mix your glaze ingredient. Adjust to taste and set aside.
  • Sear the Skin Side Heat an oven-safe skillet (like cast iron) over medium-high heat. Add a small amount of oil. Place the salmon skin-side down in the pan and sear for 3–4 minutes, or until the skin is crispy and browned.
  • Add the Glaze While the salmon is still in the pan, spoon the mustard glaze over the top of each fillet.
  • Bake to Finish Transfer the skillet to the preheated oven. Bake for 6–8 minutes, depending on thickness, or until the salmon flakes easily with a fork and reaches an internal temperature of 125–130°F (52–54°C) for medium.
  • Rest and Serve Let the salmon rest for a couple minutes before serving. Garnish with chopped parsley or dill if desired.
