Soy-Glaze Marinade (Sweet, Salty, Umami-Packed Perfection)

If you’re looking for a marinade that brings sweet, salty, and umami flavors together in perfect harmony, this Soy-Glaze Marinade is it. It’s the kind of sauce that turns even the most basic proteins—like flank steak, chicken, or tofu—into something crave-worthy and unforgettable.
At its heart is soy sauce, a pantry staple rich in umami and depth. From there, we add brown sugar for a touch of sweetness that caramelizes beautifully when grilled or pan-seared. Fresh garlic and ginger bring aromatic zing, while rice vinegar adds a subtle tang that balances the richness. A splash of sesame oil rounds everything out with its nutty, toasty flavor.
This marinade is incredibly versatile. Use it for:
- Beef: Especially flank, skirt, or short ribs
- Chicken: Thighs, breasts, or wings
- Tofu & Veggies: For stir-fries, skewers, or roasting
- Seafood: Shrimp or salmon shine with a short marinate and quick sear
Whether you’re grilling outdoors or cooking on the stovetop, this soy glaze brings that signature sticky-sweet, deeply savory flavor that clings to your protein and leaves you licking your fingers.
