Looking for an elegant seafood dish that’s simple enough for a weeknight yet impressive enough for guests? This Soy Glazed Halibut is the answer. Delicately marinated in a bold blend of garlic, ginger, cilantro, soy sauce, sesame oil, and sake or rice wine, this fish is then grilled to perfection, yielding tender, flaky meat with a savory, sweet, and aromatic glaze.

This marinade is not only packed with umami-rich flavor, but also works beautifully on other types of fish like salmon, sea bass, or tuna. The glaze caramelizes slightly during cooking, forming a delicious coating that enhances the natural richness of the fish. A quick brush of oil ensures the fish doesn’t stick and gives it a restaurant-worthy finish.

Whether you’re hosting a dinner party or craving something refined and easy, this soy glazed halibut recipe is a sure win. It’s healthy, gluten-free, and bursting with flavor — ready in under 30 minutes if marinated ahead.

Ingredients

  • 4 Halibut filets 6 to 8 ounces
  • Soy glaze as needed
  • cilantro Chopped for garnish
  • Toasted sesame seeds for garnish

Instructions

  • Sear the Fish: Heat a lightly oiled skillet over medium-high heat. Once hot, place the halibut (or desired fish fillets) presentation-side down and sear for 2–3 minutes until a golden crust forms. Flip and sear the other side for 1 minute
  • Bake in the Oven: Transfer the seared fish to a preheated 450°F oven. Bake for 10–12 minutes, or until the fish is cooked through and flakes easily with a fork.
  • Glaze the Fish: Remove the fish from the oven and brush a generous layer of soy-garlic glaze over the top of each fillet.
  • Caramelize the Glaze: Switch your oven to broil (or increase heat to 450°F). Return the glazed fish to the oven and broil for 1–2 minutes, just until the glaze begins to bubble and caramelize. Keep a close eye to prevent burning.
  • Garnish & Serve: Remove from the oven and garnish with toasted sesame seeds and chopped fresh cilantro. Serve immediately with your favorite sides.
