Mustard Glazed Salmon

This Mustard Glazed Salmon is perfect when you want restaurant-quality results at home. The method is simple: start by searing the skin until it’s golden and crisp, then finish the salmon in the oven for a tender, juicy interior. The mustard glaze caramelizes beautifully, creating a tangy, slightly sweet crust that complements the richness of the fish.
Begin by patting the skin dry and brushing it with a little oil or melted butter. Sear skin-side down in a hot, oven-safe skillet until the skin is browned and crisp—about 3–4 minutes. While it’s still in the pan, spoon the mustard glaze over the top of each fillet.
Next, transfer the skillet to a preheated 400°F (200°C) oven and bake for another 6–8 minutes, or until the salmon is just cooked through and flakes easily with a fork.
This technique delivers the best of both worlds: a crispy skin and a beautifully glazed top. It’s perfect for quick weeknight dinners or when you want to impress without the grill.

Mustard Glazed Salmon
Ingredients
- 4 6-8 oz Salmon fillets skin-on
- ¾ cup Mayonnasie
- ⅓ cup Dijon Mustard
- 1 tablespoon Fresh Dill Chopped
- Salt and pepper to taste
Instructions
- Preheat the Oven Set your oven to 400°F (200°C) so it’s ready to finish cooking the salmon after searing.
- Prep the Salmon Pat the salmon fillets dry with paper towels, especially the skin side. This helps the skin crisp up in the pan.
- Make the Mustard Glaze In a small bowl, mix your glaze ingredient. Adjust to taste and set aside.
- Sear the Skin Side Heat an oven-safe skillet (like cast iron) over medium-high heat. Add a small amount of oil. Place the salmon skin-side down in the pan and sear for 3–4 minutes, or until the skin is crispy and browned.
- Add the Glaze While the salmon is still in the pan, spoon the mustard glaze over the top of each fillet.
- Bake to Finish Transfer the skillet to the preheated oven. Bake for 6–8 minutes, depending on thickness, or until the salmon flakes easily with a fork and reaches an internal temperature of 125–130°F (52–54°C) for medium.
- Rest and Serve Let the salmon rest for a couple minutes before serving. Garnish with chopped parsley or dill if desired.
